As one of Scotland’s most iconic 15th-century buildings, it’s no surprise that Dundas Castle is often used as a filming location for movies and TV shows or as a venue for all sorts of events, including luxury weddings. In fact, just recently, Victoria and Ron celebrated their nuptials at this historic landmark, and Hog Roast Queensferry had the honour of providing the food on this occasion!
Our team had been approached by the bride months before the wedding went ahead, and she had given our catering manager, Steve, lots of detail to worth with. This allowed Hog Roast Queensferry to come up with a meal plan that best matched the clients’ needs and that of the 80 guests.
The menu Victoria had chosen was our ever-popular Classic Hog Roast buffet, which is a wonderfully simple group-dining solution with plenty of flavours for the guests to indulge in. And the fact we were able to offer a meat-free alternative in addition to the hog roast made Victoria even happier, as it meant she was able to cater for the needs of all of her guests without having to hire a secondary catering service. This kept everything simple and stress-free for the couple, who already had enough to deal with in the lead up to their big day.
Fast forward to the day of the wedding, Hog Roast Queensferry travelled the short distance to Dundas Castle, where they worked tirelessly to prepare the meal in time for the 1:30 pm serving time. This involved scoring the pig’s skin and rubbing salt into the meat before leaving it to cook above a deep layer of savoury stuffing. And whilst the meat sizzled its way to golden perfection, Steve and the team pieced together the veggie kebabs, which they grilled over real flames before pairing them with flatbreads and tzatziki dip.
The smells coming from the food were irresistible and instantly caught the attention of the guests, who immediately lined up to get a taste of the tasty food. Much to their delight, the flavours were even more delicious than the aromas, which led many of the guests to seek out second and third helpings!
